Woman-Run Milam & Green Whiskey Releases Kentucky-Aged Expression

Milam & Greene’s Gray Wolf spends half its aging process in Kentucky.

All good things come through Kentucky.

Milam & Greene out of Blanco, Texas, is releasing their Gray Wolf Straight Bourbon. Gray Wolf is a blend of two six-year-old, cask-strength collectors’ casks. It is the first release of the company’s 2025 Wildlife collection. 

While the company is in Texas, the Gray Wolf bourbon spends half of its life aging in Kentucky. 

“The Wildlife Collection is more than just an incredible collectors’ bourbon; it is also an opportunity for us to test how climate impacts the aging of whiskey,” says Heather Greene, Milam & Greene Whiskey master blender and CEO, in a release. “Whiskey barrels aging in our rickhouses are open to natural airflow, letting the Texas weather make its mark on it. The Gray Wolf barrels spent roughly half their time aging in Kentucky and the other half in Texas. The climatic whipsaw over the last three years in Hill Country, with some of the coldest cold we’ve ever experienced, along with extreme drought and long periods of intense 100+ degree heat, had a tremendous effect on the rate of maturation and the final flavors that you just won’t get in other locations.”

Gray Wolf is named for the largest species of wolf that has historically hunted on the land where the distillery is located in Blanco. Just like Gray Wolf pups, this bourbon is born in Spring. 

The limited release was distilled at the Green River Distilling Company in Kentucky, with a 60% corn mashbill, 36% rye, and 4% malted barley, offering a bold flavor with a mahogany color. 

Its nose is “maple bar, coffee cake, creamed corn, fresh mint, and baking spices,” with a full-bodied, smooth feel with ‘butterscotch candy, black tea, dill, fresh herbs, peppercorn, and a balanced oak.”  The finish is described at “German chocolate cake, herbal lozenge, and loads of fresh mint.” 

Sounds like a perfect bourbon for juleps. 

It is a limited release with sales that began on March 26. Bottles will be available for shipping or pick-up at the Blanco distillery.
